Every Valentine's Day, I find myself in the check-out
lane with a grocery cart filled with bizarre, out-of-the-ordinary
ingredients. While I'm a huge fan of splurging left
and right, sometimes the convenience and pleasure found
in a simple evening meal is hard to beat.
So this year -- instead of spending $200 for lobster
and Veuve Cliquot -- I'm choosing to return to a tried-and-true
dish that always draws raves: Chicken Parmesan. Simple,
delicious, easy ingredients paired with a complete menu
that won't break your wallet.
Should you crave a touch of tenderloin luxury for a
fancier Valentine's meal, I've got another favorite
coming up. And though it it requires a bit more prep-work,
the total bill is pleasantly low. Enjoy.

TIMELINE
Early in the day
make pudding; refrigerate
An hour before the meal
assemble salad
make dressing, but do not toss with salad yet
45 minutes before the
meal
prepare chicken for oven
begin bringing pasta water to a boil
heat oven to 400 degrees
20 minutes ahead
place assembled chicken dish in oven
10-13 minutes ahead
add pasta to boiling water
5 minutes ahead:
toss salad with dressing
heat baguette
1 minutes ahead:
prepare individual plates
After dinner:
serve pudding
