To savor the "lungs," insert your finger into the head and scrape out the brownish-yellow mystery mush inside. Then pop your finger in your mouth and suck it clean.

It's not as gross as you might imagine. Just very flavorful mash.

(Squeamish crawfish eaters can skip this step.)

Don't automatically dismiss this step.
Experienced crawfish eaters consider the stuff inside the head a delicacy. Yeah, we know. "Delicacy" is usually a polite name for something you don't want to eat.

But, in the spirit of the Crawfish Festival, we gave it a whirl, and it was actually pretty tasty. The flavor can be compared to a VERY mild variation of chicken liver. So if you like pâté, you'll probably want to try this step.
