Gently squeeze the tail end of the body close to where it joins the head. Hold the head steady and gently twist the tail end, still applying pressure. The meaty end will twist out of the head.

The Big Squeeze
It's essential to squeeze the top of the tail when you twist it out. Vince is demonstrating the top-to-bottom squeeze, but we found the sideways squeeze works equally well. If you don't squeeze at all, the meat will often break off at the joint, leaving a big old chunk left sitting in the head.
