Vegetarian Cooking for Everyone
By Deborah Madison
752 pages; Amazon.com price: $28

If I had to cook every meal--for the rest of my life--using only this book, I would be happy as a clam. Or rather, ecstatic as an eggplant, as Ms. Madison prefers dishes of vegetarian nature. And that's just the thing. Not only is this a veritable tome for the green-loving culinary fiend, recipes can easily be adapted to suit the tastes of those craving a slab of red meat every now and then.

Organized into categories--grains, fruits, nuts, etc.--this is the kind of book that will inspire you to cook on even the most dreary of days. You'll find sidebars aplenty on how to mix and match her ingredients to what's available at your favorite grocer. And best of all, Ms. Madison (as I prefer to call this culinary queen) is a huge promoter of farmer's markets around the country. And quite frankly, if you prefer soggy veggies and stale potatoes to the delicacies available directly from those who toil with the soil-then this amazing source is not for you.

Oh, and then there's the price. Yes, it does really cost $40 in most stores, but I can guarantee that you will ADORE every recipe in this bible. How could you not? She makes Spanish omelets the right way and knows how to cook Jerusalem artichokes.
