Even if you've never baked a cake that didn't come from a box, Maida Heatter's Cakes will have you baking with confidence. Renowned for her easy style and thorough instructions Maida Heatter is both an expert baker and an expert teacher.

Her cakes aren't fussy affairs that require mastery of hundreds of esoteric pasty tools; they're relatively simple but extraordinary delicious classics that anyone with a little patience can pull off. The book is fronted with a concise cake-baking primer that explains the basics of ingredients and techniques.

Although the book lacks pictures (a shame, because most of these cakes would be lovely to behold), Heatter's instructions are thorough and anticipate most any question the novice home baker might have. The book is divided by type of cake: plain (unfrosted), chocolate, layer, fancy, cheesecakes, fruit and nut cakes, and so forth. Each recipe is introduced with a little story and description that will get your mouth watering.
