If
summertime in your area means an abundance cheap mangoes,
this is a lovely way to prepare the tropical treat.
Make the same with peaches if mangoes are
a luxury item where you live.
peeled, sliced flesh from 6 ripe mangoes
3/4 cup flour
1/2 cup cold butter,
cut up into 8 pieces
1/2 cup sugar
1/4 tsp powdered ginger
dash of salt
vanilla ice cream
Preheat
oven to 450°. Butter an oven-safe casserole dish.
Layer mango slices. In a food processor or blender,
combine remaining ingredients until well blended and
crumbly. Spread crumbs over mangoes. Bake for 15 minutes.
Reduce heat to 350° and bake another 10 minutes.
Let cool somewhat, then serve over ice cream.
