Out of the Frying Pan

This tip came from a cooking class with Bob Blumer, the Surreal Gourmet and Nikol's imaginary boyfriend. Use oven cleaner to get rid of those grease burns all over the bottom of your pans.

 

Easy-off Your Pans

I tried this technique on more than 10 years' worth of stains on the bottoms of my beloved Le Creuset pans, plus a couple years' worth of stains on a really cheap nonstick pan. The results were terrific, as you can see.

Heat up your pans for a few minutes on your stove top. If they're non-stick pans, keep the heat relatively low so you don't burn up the finish. If they're cast iron, go to town.

Put your pans over your stainless steel sink. If your sink is ceramic or if you're worried about the finish, put the pans over several layers of newspaper instead.

Spray with a generous foam of Easy-off and let it sit for about 15 minutes.

Wipe away! Hooray! If the stains are especially egregious, you may need to give it a second go-around.
