Beef Tenderloin

Serves 2

3/4-1 pound beef tenderloin, whole
2 tablespoons herb butter
salt and pepper

  1. Heat oven to 400 degrees.
  2. Season tenderloin on both sides with salt and pepper.
  3. Melt butter in a skillet. Add the tenderloin and sear quickly on all sides -- the crust should be a medium brown.
  4. Transfer tenderloin to an oven-safe dish. Cook for about 20-25 minutes or until done to your specifications. Ideally, meat should be about medium-rare.
