Spinach Salad with Bleu Cheese (5 minutes)

Makes 4 servings

spinach leaves, washed, dried and stems removed
one ounce bleu cheese, cubed
half a cucumber, diced
1 red onion, sliced into rings
5 cherry tomatoes, halved

for the dressing:

1 tablespoon balsamic vineagar
3 tablespoons olive oil
1 tablespoon honey
1/2 tablespoon water

  1. Combine ingredients for dressing. Toss with spinach leaves, vegetable and top with bleu cheese.
