Contrary to their name and appearance, pink peppercorns are
not actually peppercorns, but berries. They can be found at
gourmet stores either freeze-dried or packed in brine or water.
Whole pink peppercorns are odorless. Once ground, however
they have a delicate sweet, yet peppery, taste and aroma.
They are often used along with white and black peppercorns
in a clear pepper mill for appearances. They are also commonly
used in sauces, fish dishes and as a final dusting for presentation.
Pink peppercorns in large quantities can cause illness, so
use sparingly.
Once opened, refrigerated water-packed pink peppercorns will
last for about a week. Berries packed in brine can be refrigerated
for 3 to 4 weeks. Freeze-dried pink peppercorns should be
stored in an airtight container and kept in a cool, dark place
for about 6 months.
