Queso Fundido (15 minutes)

Richer and prettier than Classic Queso, Queso Fundido (literally, "melted cheese") is a cinch to make and dressy enough to serve an an upscale cocktail party. Use a small (6" or smaller) broiler-safe pan, preferably cast iron.

4 oz. queso fresca, crumbled
4 oz. queso quesadilla, shredded or broken up
3 whole roasted green chiles, cut into 1" strips (or one small can, drained)
corn tortillas

  1. Preheat oven to 400°. Toss ingredients in pan.
  2. Place in oven until melty, about 10 minutes. Set oven to broil/heat broiler.
  3. Meanwhile, warm tortillas on a griddle or in the microwave. Broil for about 2 minutes, until top is bubbly and brown in spots.
