Cheesy Baked Mashed Potatoes

Next time you make mashed potatoes, make more than you need and bring the leftovers back to life with this quick, dreamy side.

This makes 4 normal or 2 very generous servings.

2 cups leftover mashed potatoes
2 tbsp. butter
2 oz. crumbled goat cheese
2 oz. shredded Monterey jack cheese
salt and pepper

Preheat oven to 400°. You'll need an ovenproof casserole dish or dishes. You can use a small (1 - 2 qt.) casserole dish, 2 individual 1-cup casseroles, or 4 6-oz casseroles. Bring potatoes to room temperature, or microwave a minute or two.

Pack potatoes into dish(es). Dot with butter, then sprinkle with goat cheese and Monterey jack. Bake for 20 minutes, until cheese begins to brown. Sprinkle with salt and freshly-ground black pepper.

Variations

Top with crumbled bacon before baking

Mix chunks of ham into potatoes before packing them into the casseroles for a one-dish meal

Blend in 1 tsp. crushed red pepper into either potatoes or crumbled cheese

Substitute cheddar for one or goat cheese or blue cheese for Monterey jack
