Cheesy, Baked Mashed Potatoes
2 cups leftover mashed potatoes
2 tbsp. butter
2 oz. crumbled goat cheese
2 oz. shredded Monterey jack cheese
salt and pepper
- Preheat oven to 400°. You'll need an ovenproof casserole
dish or dishes. You can use a small (1 - 2 qt.) casserole dish, 2 individual
1-cup casseroles, or 4 6-oz casseroles. Bring potatoes to room temperature,
or microwave a minute or two.
- Pack potatoes into dish(es). Dot with butter, then
sprinkle with goat cheese and Monterey jack. Bake for 20 minutes, until cheese
begins to brown. Sprinkle with salt and freshly-ground black pepper.
