Turkey and White Bean Chili

If the legs are always the last go go at your dinner table, you'll love this quick and easy chili recipe. It's also great with chicken or pork

2 tbps. olive oil
1/2 yellow onion, chopped
1 cup of your favorite stock (beef, chicken, or veggie)
2 cups chopped cooked turkey meat (about two good-sized drumsticks), or chicken or pork
1 tsp. cumin
1 tbsp. chili powder
1 tsp. salt
1/2 tsp. black pepper
2 tsp. oregano
5 cloves garlic, crushed
1 can whole tomatoes, coarsely chopped, plus liquid
1 can white beans, rinsed and drained
1 tbsp. cornstarch dissolved in 2 tbsp. water
sour cream, Monterrey jack cheese, cilantro, and green onions, as garnish

Saute chopped onion in olive oil until soft, about 5 minutes. Add turkey, garlic, and spices, stirring constantly. Add a bit of stock and deglaze the pan if it dries out too much.

Pour in remaining stock, tomatoes with liquid, and beans. Stir to combine.

Add cornstarch solution and stir to combine completely. Simmer on very low, covered, about 15 - 20 minutes. Serve with tortillas or cornbread.
